Annual Holiday Pig Roast and Christmas Tree Sale
By Tom Evans
December, 2009
Every year in early December, as part of our family/business celebration of the coming of Christmas, I host an outdoor gathering here at the Garden center. We celebrate with good cheer and Christmas music around an open fire while we share stories of Christmas and the year we have completed. We prepare and serve pork barbeque, cooked closed pit style, where the pig is cooked in a hole in the ground with glowing coals all around to provide the cooking heat. The pit is covered with a fire box which adds extra heat conducted thru the box into the cooking space below. The bones, still clinging to the last portions of meat are then tossed into the stew pot and cooked down to a meaty broth. Potatoes, onions, corn, lima beans, and tomatoes sauce finish the basis of my own version of Brunswick stew. We add special spices like barbeque and Worcestershire sauces and thicken with bread crumbs. Kept hot in a crock pot it provides the perfect complement to the search for amongst our cut Christmas trees, or wreaths and poinsettias, all available for sale. We invite friends and clients of the business and the family. This year's event is scheduled for December 5. We hope you can join us.
